I bake today: Bake simple muffins – Muffin basic recipe

Ingredients for about 20 muffins:
- 500 grams of flour
- 250 grams of butter
- 250 grams of sugar
- 125 milliliters of cream
- 5 eggs
- 1 packet of vanilla sugar
- 1 packet of baking powder
- Zest of an untreated lemon
Kitchen Helper/Gadgets:
- Muffin tin/Muffin cups made from paper
- Mixer/food processor
- Sieve
- Grater

Preheat the oven to 200°C (top/bottom heat). Timely get butter out of the fridge to assume room temperature, possibly short warm up in the microwave, but do not melt. Grease muffin tin with butter or line with paper cases. Finely rub lemon.
…for the muffin batter:
Mix butter, sugar and vanilla sugar using a mixer or food processor in a bowl for about 5 minutes until foamy/creamy. Add lemon zest, then add the eggs gradually while stirring the butter-sugar mixture and stir each egg about 1 minute. Then mix flour and baking powder and add flour to the butter-sugar mixture. Finally add cream and mix everything once again with the help of a mixer or food processor for another 5 minutes until the batter is nice and smooth.
…for the muffins:
Give batter into the prepared muffin tin, fill the molds only about ⅔, because the batter rises during baking. Give muffin tin in the preheated oven and bake for about 15 minutes until the muffins are golden brown and risen.
