Ingredients (for 4 servings):
- 250 Grams cherry tomatoes
- 1 Yellow pepper
- 100 Grams of pepperoni (as a whole)
- 250 Gram mozzarella
- 3 tbsp. white balsamic vinegar
- Salt
- Freshly grounded black pepper
- 1 tsp. medium-strength mustard
- 1 tbsp. Honey
- 3 tbs. olive oil
- 3 Stalks basil
Preparation:
Wash and halve the tomatoes. Wash peppers, cut in half, remove seeds and cut into bite size pieces. Cut pepperoni into slices. Drain mozzarella.
For the dressing: Mix vinegar, salt, pepper, mustard and honey, add the olive oil while using a whisk. Wash the basil and remove the leaves. Mix all the ingredients with the dressing mix and serve the salad garnished with basil leaves.
