Ingredients for 2 servings:
- 125 grams of green salad
- 150 grams of halloumi
- 3 tablespoons of olive oil
- 2 tablespoons of pine nuts
- 2 tablespoons of bright balsamic vinegar
- 1 teaspoon of liquid honey
- Salt
- Black pepper, freshly ground
Instructions…
Pat dry halloumi and cut crosswise into 1 centimeter thick slices. Heat up a pan adding 1 tablespoon of olive oil and fry the cheese over medium heat about 2 – 3 minutes on each side. After 1 minute of frying add the pine nuts and roast them until, then set aside.
Rinse lettuce and shake dry. Halve apricots and cut into thin wedges.Spread salad, apricots and halloumi on plates.
Mix balsamic vinegar, 2 tablespoons water, 1 tablespoon of honey, a pinch of salt, a pinch of pepper and 2 tablespoons of olive oil using a whisk. Sprinkle the vinaigrette over the salad and serve garnished with the roasted pine nuts.
