Ingredients (for 4 servings):
…for the poultry meatballs:
- 400 grams of minced chicken
- 2 onions
- 2 eggs
- 1 bun/roll
- Salt
- Black pepper, freshly ground
- ½ bunch of parsley
- 2 tablespoons of olive oil
…for the potato-corn-salad:
- 800 grams of small potatoes, firm cooking
- 1 onion
- 4 tablespoons of olive oil
- 3 tablespoons of whitewine vinegar
- 100 milliliters of chicken broth
- Salt
- Black pepper, freshly ground
- A pinch of sugarr
- 2 hands of lettuce
- 8 cherry< tomatoes
Instructions:
…for the poultry meatballs:
Peel the onions and dice them. Heat up a pan with 1 tablespoon of olive oil and fry half of the onions in golden and brown over medium heat, lift onions out of the pan and set aside.
Soak bun/roll in water and squeeze. Finely chop parsley.
Mix minced chicken, remaining onions, 2 eggs, finely chopped parsley, a pinch of salt and a pinch of pepper in a large mixing bowl, then form meatballs and flatten them slightly. Heat up a pan with 1 tablespoon of olive oil and fry the meatballs over medium heat on each side about 6 – 8 minutes until golden brown.
…for the potato-corn-salad
Bring a pot of salted water to a boil and cook the potatoes covered with a lid about 25 minutes. Drain and let cool. Peel potatoes and cut them into thick slices. Peel onion and chop finely.
Mix 4 tablespoons of olive oil, 3 tablespoons of white wine vinegar, chicken broth, a pinch of salt, a pinch of pepper and a pinch of sugar and circulate well with a whisk. Pour the mixture over the peeled potatoes. Wash and pat dry lettuce. Wash cherry tomatoes and cut into quarters. Mix lettuce and cherry tomatoes with the potato salad.
