Ingredients (for 4 servings):

  • 2 onions
  • 2 tablespoons of butter
  • 3 potatoes
  • 3 carrots
  • 2 stalks of celery
  • ½ bunch of spring onions
  • 1 liter vegetable stock
  • 150 grams of noodles (from the refrigerated section)
  • Salt
  • Freshly grounded black pepper



Preparation…

Peel onions, halve and cut into strips. Heat up butter in a pan, add the onions and fry them until they have a golden brown color and set aside.

Peel potatoes, wash and chop them. Wash and cut carrots, celery and spring onions into thin slices.

Heat up vegetable broth in a large pot, add potatoes, carrots, celery and cook everything for about 20 minutes. Add the spring onions and spaetzle after 10 minutes and let it simmer until they are done.

Season the soup with salt and pepper and serve with the roasted onions.
