Ingredients (for 4 servings):

…for the meatballs:

  • 500 grams of ground beef
  • 1 bun (from the previous day)
  • 1 onion
  • 1 clove of garlic
  • ½ bunch of parsley
  • 1 egg
  • 50 grams of grated cheese
  • Salt
  • Black pepper, freshly ground
  • Paprika powder
  • Nutmeg
  • 50 milliliters of canola oil for frying

…for the yogurt dip:

  • ½ cucumber
  • 1 clove of garlic
  • 200 grams of greek cream yogurt
  • Salt
  • Black pepper, freshly ground

Preparation…

Soak bun in water. Peel and chop the onion. Peel garlic and finely chop. Wash the parsley, pat dry, pluck off the leaves and chop. Squeeze the soaked bread/bun. Give bread, cheese, parsley and onions together with the grounded beef in a bowl, season with salt, pepper, paprika powder and a pinch of freshly grated nutmeg and knead well. Then form small meatballs.

Heat up a large pan adding some oil and fry the meatballs from all sides until golden brown about 10 minutes. Drain on paper towels and keep warm in the oven at 75°C.

Wash and grate cucumber. Peel garlic and chop finely. Mix yogurt, grated cucumber and garlic and season with salt and pepper.

Serve meatballs with yogurt dip.
