Treecake/German Layer(ed) Cake
Treecake/German Layer(ed) Cake

Ingredient for 1 Treecake/German Layer(ed) Cake:

  • 6 eggs
  • 250 grams of butter
  • 250 grams of sugar
  • 150 grams of flour
  • 100 grams of cornstarch
  • 1 packet of baking powder
  • 1 teaspoon of rum flavor
  • 1 packet of vanilla sugar
  • 200 grams of dark chocolate

Kitchen Helper:

  • 1 springform pan
  • 1 sheet of baking paper
  • A large pot + small pot/bowl for the double boiler
  • A large bowl for stirring the batter
  • A bowl to beaten the egg whites until stiff
  • Mixer/food processor
  • Sieve
  • A spatula
  • A dough scraper or a cake lifter
  • A wire rack/baking shelf

Instructions:



…preparations:

Line the bottom of a springform pan with parchment paper. Separate 4 eggs in egg white and egg yolk. Carefully melt the butter in the microwave. Preheat the oven to 220 degrees (grill function).

…for the treecake batter:

Add melted butter, 2 eggs, 4 egg yolks, about ⅔ of the sugar, 1 package of vanilla sugar & 1 tablespoon of rum flavor to a large mixing bowl. Whisk up the ingredients about 5 minutes using a blender or food processor.

Sieve cornflour, flour and baking powder to the batter and gently fold in with a spatula & stir until everything is smooth.




Whisk up the egg whites with a pinch of sugar, then gradually add the remaining sugar (75 grams should be left) stirring/whisking constantly until the egg whites form stiff & solid peaks. Add the beaten egg whites to the batter and gently fold in with a spatula.

…for the treecake:

Give 2 tablespoons of batter into the prepared springform pan and spread evenly on the baking paper using a dough scraper (alternatively with a cake server/lifter). Give the springform pan in the preheated oven and bake light brown on the middle rack about 2 minutes. Take the springform pan out of the oven, give another 2 tablespoons of batter into the springform pan and spread evenly on the baked layer. Bake the second layer on the middle rack about 2 minutes until light brown. Do the same for the rest of the batter until it is completely depleted.




Then take the cake out of the oven and let cool down. Remove the springform pan and topple the cake on a grid. Remove the baking paper.

…for the chocolate coating::

Melt the dark chocolate over a double boiler until its smooth. Completely coat the layer cake with melted chocolate and allow to cool in the fridge.
