Beef steaks on Hokkaido pumpkin with tomato, beans & fried sage

Ingredient for 4 People:

  • 4 beef steaks
  • 2 hokkaido pumpkins
  • 400 grams cherry tomatoes
  • 2 shallots
  • 2 cloves of garlic
  • 5 – 6 branches sage
  • 200 grams of green beans
  • Butter
  • Olive oil
  • Salt & pepper

Kitchen Helper:

  • Baking sheet + baking paper
  • 1 pan for searing the beef steaksr
  • 1 pan for frying the sage
  • 1 small pot for cooking the beans
  • Aluminum foil
  • Paper towels



Instructions:

…preparation:

Preheat oven to 220°C (top / bottom heat). Peel garlic and cut into thin slices. Pell the shallots and cut into thin rings. Wash green beans, cut ends off and halve them. Pluck sage leaves, then chop them finely. Halve hokkaido pumpkin with a sharp knife, remove the seeds with a spoon, then cut pumpkin into cubes of 1 – 2 centimeter size.

…for the hokkaido pumpkin:

Line a baking sheet with parchment/baking paper. Spread hokkaido pumpkin cubes on the baking sheet, drizzle them with olive oil and season with salt and pepper, then cook for 20 – 25 minutes in the preheated oven.

…for the beef steaks:

Rinse beef steaks under running water and pat dry them with kitchen paper, then season on both sides with salt and pepper. Heat up a pan without adding oil/grease and sear the steaks for 2 – 3 minutes. Then lift them out of the pan and give for about 5 minutes with the pumpkin in the oven (preferably on a separate rust). Take the steaks out of the oven, wrap them in aluminum foil & let rest until serving the dish.

…for the tomatoes and beans:

Give a flake of butter to the “steakpan” & fry shallot rings and garlic slices a few minutes glassy over medium heat. Add cherry tomatoes and beans and cook while turning occasionally for about 4 – 5 minutes at medium heat. Season with salt and pepper.

…for the fried sage:

Heat up a large pan adding a generous flake of butter. Add the finely chopped sage when the butter starts to foam and fry crispy for about 1 – 2 minutes.

Distribute in the oven-cooked pumpkin on plates, arrange beef steaks, tomatoes and beans on pumpkin cubes & serve the dish garnished with the fried sage.
