I cook today: Simple Fish Sandwich with Remoulade Sauce

Ingredients for 4 servings:
- 4 bread rolls
- 4 fillets of young herring
- 1 red onion
- 1 tomatoe
- ¼ cucumber
- 4 lettuce leaves
- 125 grams mayonnaise
- 2 eggs
- 1 gherkin + 2 tablespoons gherkin pickle water
- 1 teaspoon pickled capers
- 1 sardine (in oil)
- 1 teaspoon mustard
- 1 tablespoon finely chopped parsley & dill each
- Salt & pepper
- Small pot to cook the eggs until hard
- Small bowl to stir together the remoulade
…preparations for the remoulade:
Heat up a small pot of water & bring to a boil. Once the water starts boiling add the eggs and cook for 10 minutes until hard. Then drain the hot water and refresh the eggs with cold water.
Finely dice a gherkin. Finely chop a tablespoon of pickled capers. Finely chop the sardine or crumble with your fingers. Peel the eggs and dice finely.
…for the remoulade:
In a small bowl stir together 125 grams of mayonnaise along with diced gherkins, about 2 tablespoons of gherkin pickle water, chopped sardine, chopped capers, diced eggs, 1 teaspoon mustard, a tablespoon finely chopped parsley, a tablespoon finely chopped dill & a good pinch of salt and pepper, then set aside until serving.
Peel a red onion and cut into thin rings. Cut tomato & cucumber into thin slices. Pick off 4 large lettuce leaves from the head.
…for the Fish Sandwiches:
Cut the bread rolls in half with a knife and spread the bottoms with a good tablespoon remoulade. Then garnish the rolls with salad leaves, a few slices of cucumbers & tomatoes, filets of herring & a few onion rings. Also spread the roll top halves with a tablespoon remoulade and lid the sandwich with the top half.
