Turkish Pide with Spinach, Bell Peppers & Feta Cheese
Turkish Pide with Spinach, Bell Peppers & Feta Cheese

Ingredients for 4 servings:

…for the pide dough:

  • 250 grams of flour
  • ½ cube of yeast
  • 125 milliliters of lukewarm water
  • ½ tablespoon of sugar
  • ½ teaspoon of salt
  • Olive oil

…for vegetarian stuffing:

  • 150 grams of feta cheese
  • 1 red onion
  • 300 grams of fresh spinach
  • 2 bell peppers
  • 1 clove of garlic
  • ½ teaspoon of cinnamon
  • 1 teaspoon of cumin
  • Olive oil
  • Salt & pepper

Kitchen gadgets:

  • Possibly Mixer/food processor
  • Whisk or fork
  • A high vessel for mixing the yeast-water mixture
  • Mixing Bowl
  • Kitchen towel
  • Large pan
  • Rolling pin
  • 2 baking sheets + baking paper



Instructions:

…for the pide dough:

Crumble ½ cube of yeast into a high vessel and pour in 125 milliliters of lukewarm water. In addition add ½ tablespoon of sugar and stir using a whisk or a fork stir until yeast and sugar have completely dissolved. Add 250 grams of flour, the yeast-water mixture, ½ teaspoon salt and a good dash of olive oil into a mixing bowl and knead using your hands or a food processor until a smooth dough. Possibly add some more flour if the dough is too sticky. Then form a ball of the dough, sprinkle with about 1 tablespoon of olive oil and rub all sides with the oil. Then let rest/stand covered with a kitchen towel in a warm place for about 30 minutes.

…for the vegetarian stuffing:

Peel onion, then chop finely. Also peel garlic & chop finely. Wash peppers, remove the seeds and then cut into strips. Cut feta cheese in about 1 centimeter sized cubes.
Heat up a large pan adding a drizzle of olive oil and fry the finely chopped onions and garlic a few minutes over medium heat until glassy. Add the pepper strips and sauté turning occasionally for about 3 – 4 minutes. Now gradually add the spinach and let fall apart. Do not add the spinach at once, add it gradually and let fall apart. Finally season with 1 teaspoon of cumin, ½ teaspoon of cinnamon, a pinch of salt & a pinch of pepper. Stir in the spices and then set aside the stuffing.

…for the pide pizzas:

Preheat the oven to 200 degrees (top/bottom heat).

After 30 minutes of resting time give the pide dough onto the countertop and briefly knead again. Then cut dough into 4 equal sized pieces. Form each piece of dough into a ball and then roll out with a rolling pin until thin & approximately oval.

Lift the rolled out pide on a lined baking tray, 2 pide per baking sheet. Top them with the filling/stuffing leaving about 1 centimeter space at the edges. Finally garnish the filling/stuffing with a few cubes of feta cheese and fold the edges over the filling/stuffing until the pide looks like a small boats.

Bake the “pide boats” in the preheated oven for about 15 minutes until golden brown and crispy.

    eine offene Frage bleibt aber:
    Ist es moeglich statt Fetakäse auch gouda verwenden?

  2. Vielen Dank für das leckere Rezept. Es erinnert mich an vergangene Tage als wir bei uns im geschäft ein bis zwei Mal die Woche eine Pide-Pizza geholt haben. Nur sieht die hier noch besser aus. Muss ich auf jeden Fall mal ausprobieren.
