Ingredients (for 4 People):
…for the Orzo-Salad:
- 200 Grams of Orzo
- 200 Grams cherry tomatoes
- 1 Sprig of rosemary
- 2 tbs. capers (glass)
- 5 tbs. olive oil
- Salt
- Freshly grounded black pepper
- 1 tsp. paprika (spice)
- 50 Grams of black olives
- Juice of half a lemon
…for the Ćevapčići:
- 1 Onion
- 2 cloves garlic
- 2 tbs. red wine
- 1 tsp. thyme
- 1 tsp. paprika (spice)
- Salt
- Freshly grounded black pepper
- 200 Grams of lamb, beef and pork mince
- 2 tbs. olive oil
Preparation:
Cook the Orzo according to the package instruction. Wash tomatoes, pat dry and cut in half. Finely chop the rosemary needles.
Use a fork to crush 6 tomatoes in a bowl. Add liquid of capers, olive oil, rosemary, salt, pepper, and paprika and whisk it well. Drain the Orzo and add it into the sauce. Mix in olives, capers and the remaining cherry tomatoes.
Let the salad cool down and season with lemon juice, salt and pepper.
…for the Ćevapčići:
Peel onion and garlic and chop them finely. Add wine, thyme, salt, pepper and paprika to the minced meat and knead it. Use the mincemeat mass and form finger-thick rolls, brush them with oil and grill them in the pan for about 10 minutes.
