Ingredients (for 2 Servings):

  • 400 Grams of small potatoes
  • 1 Clove garlic
  • 1 tsp. olive oil
  • 4 Eggs
  • 4 tsps. of milk
  • 4 tsps. of whipping cream
  • Freshly grounded black pepper
  • 1 Sprig rosemary
  • 1 tbsp. clarified butter
  • Salad leaves
  • Salt



Zubereitung:

Add potatoes in salted water and cook them for about 25 min. after that drain them and let them cool down. When they are cooled down, start to peel 4 of the potatoes and cut them into cubes with the size of ½ centimeters. Peel the garlic and chop them finely. Whisk the eggs with milk and cream and add salt and pepper. Stir in potatoes and garlic.

Heat up some oil in a large pan and add the egg-potato-mixture, sprinkle some rosemary on it and cook it over medium heat until the underside has a slightly brown color. Turn the omelet, cover the pan and fry it for another 5 minutes.

Meanwhile, heat up oil in another large frying pan and add the remaining egg-potato mixture. Season with salt and fry it until they have a brown color.

Cut the omelet in gross pieces and serve it on a plate together with the fried potatoes and garnish the meal with salad leaves and rosemary.
