Ingredients (for 2 servings):
- 2 Large tomatoes
- 100 Grams of young Gouda cheese
- 6 Small pork escalope
- Salt
- Freshly grounded black pepper
- Flour
- 1 tbsp. clarified butter
Preparation:
Clean, wash and slice the tomatoes. Grate the cheese.
Rinse the pork escalope, pat them dry and pound them with a meat tenderizer until they are a bit flat. Season with salt and pepper and flour them from both sides. Brush of any excess flour from the pork escalope.
Heat up clarified butter in a pan and fry the pork escalope for about 1 minute from each side. Add the tomato slices on top of each escalope, season with salt and pepper and sprinkle some cheese on it. Afterwards, build up a stack with 3 layers of these escalope-tomatoes. In order that they stick together, put a shashlik skewer through each of the ‘escalope towers’.
Preheat the oven up to 200 degree, insert the ‘escalope towers’ and bake them for about 10 minutes. Serve them with French fries and ketchup.
