Ingredients (for 6 Portions):

  • 1 kg beef shanks
  • 2 tbs. oil
  • 1 Bunch of greens
  • 2 Onions
  • 2 Bay leaves
  • 1 tbsp. peppercorns
  • Salt
  • 1 kg beef tomatoes
  • 450 Grams of frozen peas
  • Freshly grounded black pepper



Preparation…

Wash leg slices and pat them dry. Wash and chop the soup greens. Peel onions and cut them into quarters.

Heat up oil in a large saucepan and fry the beef shanks until they have a brown color. Add the soup greens and onions and also fry it briefly. Afterwards, insert 2 liters of water, bay leaves, peppercorns and salt covered it and let it simmer over low heat for about 2 hours.

Briefly blanch tomatoes in boiling water, peel and cut them into quarters and also remove seeds. Insert broth through a strainer into another pot, add the tomatoes and peas and boil it up. Season with salt and pepper.

Cut the meat into small pieces and serve with a soup, or use the meat otherwise, for instance with a fresh salad.
