Vegetarian rolled Dürüm with feta cheese, arugula, peppers & Za’atar lime yoghurt

Ingredients for 4 rolled Dürüm:

  • 400 Gram flour
  • 200 Milliliters of water
  • 1 Pepper
  • 200 Gram feta cheese/heder’s cheese
  • 100 Gram of arugula
  • 1 Cup of Greek yogurt cream
  • 1 Avocado
  • 1 Lime
  • 1 tbsp. za’atar spice mix
  • Olive Oil
  • Salt & Pepper

Zubereitung…

… Preparations for the thin flatbread:

Put 400 grams of flour, 200 milliliters of water, a decent dash of olive oil and 1 teaspoon of salt in a bowl and knead it with your hands or a food processor to form an elastic dough. Roll out the dough with your hands to a thick ‘sausage’ and cut it into 4 equal pieces. Form all 4 pieces of dough into balls and afterwards roll them out on a floured worktop while using the rolling pin until they are flat and thin. Tap off excess flour with your hands, heat up a large pan without adding oil or fat and fry the rolled out flatbread for 1-2 minutes on each side until you can see the typical brown spots on th eflatbread. Afterwards stack the flatbreads on top of each other, this makes it easier to role them later.

…Other Preparations:

Wash peppers, remove seeds and cut them into bite-size strips. Cut feta cheese/heder’s cheese into strips.

…For Za’atar lime yogurt:

Stir cream yoghurt together with the juice of half a lime, 1 tablespoon of za’atar spice mixture, a pinch of salt and a pinch of pepper.

…For the Guacamole:

Cut the avocado centered round to the core, remove the seeds and scrape the flesh carefully with the spoon from the shell and place it in a small bowl. Add the juice of half a lime and a pinch of salt and pepper. Puree the avocado with a fork.

Sprinkle the flatbreads generously with za’atar lime yogurt. Spread peppers, arugula, feta cheese and guacamole on it, roll it up and enjoy.
