Ingredients for 4 people:
- 500 grams of spaghetti pasta
- 300 grams of smoked salmon
- 100 grams of rocket
- 1 cup crème fraîche
- 2 red onions
- Vegetable broth
- Butter
- Salt & pepper
Kitchen Helper/Gadgets:
- 1 pot to cook the spaghetti pasta
- 1 large pan/wok
- Colander to drain pasta

Peel red onions and cut into thin half-rings. Rinse rocket salad whiole using a colander and drain. Cut salmon into bite-size strips. Prepare 250 milliliters of hot vegetable stock.
…for the spaghetti:
Bring a large pot of salted water to a boil. Add the spaghetti to the boiling water and cook about 7 – 8 minutes until al dente. Then use a colander and allow them to drain briefly.
…for spaghetti with rocket and smoked salmon::
Heat up a large pan/wok adding a flake of butter and fry the onion half-rings in a few minutes glassy. Pour in 250 milliliters of hot vegetable broth and stir in 1 cup of crème fraîche. Let simmer the sauce for about 1 – 2 minutes.Add the drained pasta (if not already done) to the sauce. Toss everything a couple of times & let simmer over medium heat turning occasionally until the noodles soaked up the sauce. Season with salt and pepper. Just before serving add rocket and smoked salmon pieces & gently fold into the pasta.
Serve spaghetti with salmon and rocket on plates and possibly garnish with freshly ground pepper.
